Weight loss- Tomato Salad

Mediterranean Tomato and Cucumber Salad
2 medium tomatoes, diced
1 cup cucumber, diced
1/4 cup chopped scallions
1/4 cup fresh parsley, coarsely chopped
1/4 cup Kalamata olives
2 Tbsp. extra-virgin olive oil
1 Tbsp. white-wine vinegar
Salt and pepper to taste














Combine all ingredients in a medium bowl; toss gently to mix. Serve within 1 hour. Makes 4 servings. Low calorie, low fat, low carbs, great for your weight loss program and p90x routine.
